Paella - BUEN PROVECHO!!

1. Take a large frying pan cover the bottom of the pan with oil.
2. Put on the hob and fry on a medium heat.
3. Cut the fish into cubes fry in the pan.
4. Add slices of tomato, red & green peppers, peas, carrots, eggplant, onions and SAFFRON.
5. Fry everything until it is a golden brown colour and add 400ml of water per person.
6. Add salt and heat it until it is boling again and then add rice.
7. Cook on a medium heat until the rice has absorbed the water.
8. Squeeze a lemon and add the juice if you want.
9. Simmer for a further 30 minutes.
